 3. Lemon Posset

One of the easiest desserts to make, Lemon Posset is perfect for entertaining with it’s creamy texture and zesty flavour served in a lemon shell for a fun, elegant touch!


Ingredients

•2 lemons (juice and zest)

•500ml cream

•150g sugar


Method

1 - Slice the lemons in half, scoop out the flesh, and set the empty shells aside.

2 - In a saucepan, heat the cream and sugar over medium heat until it just starts to simmer. Stir constantly until the sugar dissolves.

3 - Remove from heat and stir in the lemon juice and zest.

4 - Pour the mixture into the lemon shells and refrigerate for 1 hour to set.

5 - Serve chilled.
