Make the strawberry syrup ahead of time, as this is the more time consuming part of the recipe - but rest assured, you can use it for a variety of things - like drizzling over pavlova on Christmas day, serving with desserts or even turn it into a tantalising salad dressing by adding a little balsamic & basil.
Strawberry Chocolatini
30ml Lime Juice
30ml Triple Sec
60ml 1919 Chocolate Fish Gin
60ml Strawberry Syrup
60ml Pineapple Juice
To make the Strawberry Syrup:
1/2 Cup sugar
1/2 Cup Water
1 Punnet of Strawberries (stems removed, roughly chopped)
Add all ingredients to a small pot and gentle boil until the sugar has melted. Allow the pot to cool and then blend all the ingredients. If your blender leaves the seeds intact sieve them out before using the syrup so that the consistency is very smooth.
To make the cocktail fill your shaker with ice and add all the ingredients. Give everything a good shake and pour into two of your favourite martini glasses. This recipe makes two drinks.
